It'll be a rare occasion that I put a recipe on here. Mostly because I'm no Iron Chef. But I made a super simple and healthy dish that even has plenty of left overs. AND THEN... I also have my monthly wine review for you. This thing is struggling to take off, but I don't wanna give up on it just yet. I guess everyone likes drinking wine more than talking about it. Understandable.

Chicken & Veggie Casserole:

Much like my ground turkey & veggie casserole, you can pretty much make this however you want. But here is how I did mine. I did not include any kind of pasta this time!

I always use a super clean tomato sauce. Check the ingredients on what you pick up. A clean one will be super simple like "tomatoes, garlic, olive oil" nothing weird that you can't pronounce and nothing with more than than just a few ingredients.
I poured just a little bit of sauce on the bottom of my bubble and brown, and chopped up...

-1lb chicken breast
-cloves of garlic (I use a lot, we love garlic!)
-2 zucchinis
-2 bell peppers
-1/2 small sweet onion

I added the following seasonings, but you can add whatever you like!
-dried parsley
-italian seasoning
-garlic powder (seriously, we love garlic)
-salt/pepper (lots of pepper cuz I love pepper!)
-a little dried thyme
I literally never measure, I just wing it all!

Then I covered it with some shredded parmesan/romano cheese mix.
Covered it with the rest of the sauce (basically the whole jar!)
And then topped with shredded mozzarella cheese.

So... sauce, chicken, veggies, seasonings, cheese, sauce, cheese!

Throw it in the oven on about 375 for like 35 minutes. (ovens may vary)
And then nom nom nom!

Onto the wine review!
I'll start with the Noir. It was way drier than all the other Noir's I've had and I really wasn't enjoying it. We always finish a bottle and we didn't finish this one which is a bad sign. Needless to say, I will not be getting this one again. Sorry Artesa.

Then there's this Grigio. OH.MAH.GAH. I honestly think I got a bad bottle, because even "not so great" wine doesn't taste like this! It smelled like rotten vegetables mixed with dumpster. And it didn't taste much better either. I also got buzzed off of just a few sips so I really think it was a spoiled bottle or something. Who knows! What I do know is, because of this one bad experience, I'll never buy this one ever again either.

Not a good wine tasting month! Bleh!

  3. I'm definitely pinning this. I'm a chicken head! I love chicken and it's easy for me to make since I'm not the best in the kitchen. I love it that it's casserole like but without the pasta.
