Blueberry Lemon Muffins

The other day I posted that I stopped Paleo. One of my biggest reasons was because breakfast was really difficult for me. Although I ditched the caveman way, I still needed something clean and healthy to grab and go in the morning, so I made these muffins! And they do happen to be paleo friendly... of course I would do things backwards.



Gluten free, grain free, so fresh and so clean.

What you need:
2 cups almond flour
1/8 teaspoon salt
1/2 teaspoon baking soda
1 cup fresh blueberries
4 eggs (2 whole eggs and 2 egg whites)
2 tablespoons vegetable oil
1 teaspoon vanilla extract
1 lemon (will be 2 tablespoons fresh lemon juice)
1/4 cup raw honey





What you do:

  • Preheat the oven to 350F and put some fancy lil liners in your muffin tin. 
  • Mix all the dry ingredients in a medium size bowl
  • In another bowl, whisk together the eggs (2 whole, 2 whites) honey, vanilla, oil, and lemon juice
  • Add the dry ingredients to the egg mixture slowly, and stir until fully mixed (batter will be very slightly lumpy)
  • Dump in the blueberries and slowly fold them into the batter using a spatula


  • When mixed, evenly pour the batter into your muffin cups
  • Bake for 25 minutes, let cool




This was my first time making any kind of muffins from scratch and they came out pretty damn good! I will be making them again but with some small changes. For example, I'll probably add some coconut flour, protein powder and lemon zest.

  2. These look so good! I've been meaning to comment on some of your posts lately but my work computer is lame and doesn't always load the comment feature...but that's neither here nor there. I tried Paleo for a little while, I wasn't religious about it by any means, but breakfast was definitely the hardest for me too and I was/am always on the look out for paleo-ish/clean breakfast ideas, and these look perfect! Can't wait to try!!

  4. Those do sound yummy! I hate paying for fresh blueberries in January - but I've still got a whole gallon bag that I froze from the summer - Sounds like these are going on my Sunday baking list :) THANKS!
