Unicorn Poop

You may have seen on my instagram and/or twitter that I made some colorful sparkly cookies yesterday. I've been eyeballing these for awhile but didn't have a reason to make them. Today we're having a work party for my boss' birthday and it's a "pink theme" so I figured it's a perfect time to let the unicorn poops drop.



While it was tedious and took a long time, it's a very simple recipe. Just your basic homemade sugar cookie recipe! This is NOT paleo, clean or healthy in any way. Totally regular back in the day sugary fatty goodness.


What you need:
1/4 cup of shortening (Crisco)
1/2 cup butter
1 cup sugar
2 eggs
1 teaspoon vanilla extract
2 1/2 cups flour
1 teaspoon baking powder
1 teaspoon salt

I needed a lot so I doubled all of the above.

What you do:

  • Mix shortening, sugar, eggs and vanilla. Mix very well. 
  • Sift the flour into the wet mixture
  • Add baking soda and salt
  • Mix it all into a dough and let chill in the fridge for an hour
  • After an hour, heat oven to 400F
  • Divide the dough into 4 (or however many colors you want) and add food coloring, mix
  • Take a small amount of each color and ball it all together, roll it out long and twist it into a poop pile shape. 
  • Cook on 400F for about 8-9 minutes.(ovens vary)





  • Place the cookies on a cooling rack when done. 
  • Smear some glittery gel all over and decorate with unicorn thingys like stars or pearls (I used pearls, they were all I could find.)





Eat until you get a stomach ache.

Spicy Chicken Thighs and Schmaltz Potatoes



Here we are at day 4 of Recipe Week, I'm so glad that so many of you want to try them out! Today I want to tell you that schmaltz potatoes are my new favorite thing. "What the hell is schmaltz?!" is probably what you're thinking. It sounds pretty rancid, but it's goddamn scrumptious. I got some of this recipe from the Nom Nom Paleo folks (but took a few different directions based on ingredients and tools I had available). I admit that I do not like chicken thighs, I hate dark meat. But I find myself thinking about this meal and how delicious it was. And I will for sure be making it again and will be eating dark meat again.

Oh yea, and schmaltz is a fancy word for rendered chicken fat.




What you need:
cast iron pan
chicken thighs
fingerling potatoes
grass fed butter
spinach
fresh garlic
salt/pepper
paprika
garlic powder
ground red pepper
red pepper flakes


I've made chicken thighs like this a few times before since the boyfriend loves it. But I had never done potatoes like this. And I've made a gazillion potatoes a million different ways. Thanks to the NNP folks, I will forever be making potatoes this way. Nom.


What you do:

  • Preheat the oven to 475F
  • In a small bowl mix all the seasonings of your choice. You should know by now that I don't measure, I eyeball to my liking. My mix was mostly garlic powder, paprika and black pepper. I used a little bit of the ground red pepper and a very small amount (think 1/8 tsp) of the red pepper flakes. [Add more if you like it spicaaayyy!] Make enough mixture to sprinkle on all the chicken thighs. 
  • Rinse the chicken and pat dry with a paper towel. To get a really crispy skin, make sure to pat them dry.
  • Sprinkle your seasonings all over the skin of the thighs
  • Melt a few tablespoons of butter in the cast iron pan on the stove.
  • When the pan is hot, put all the thighs on the yummy melty butter skin down. They'll be there for a good 10 minutes. Getting the skin all cripsy. 
  • While the chicken is chillin, cut your potatoes. I skinned them and cut them very thin. Their recipe says to steam them but I couldn't/didn't so I cut them thin instead, so they would cook fast. 
  • Chop up a bunch of fresh garlic.
  • Check that the chicken is as crispy as you want it and flip it over to cook on the other side. Cook for 5-10 minutes.
  • When the chicken is almost cooked through, move to a baking sheet and toss in the oven. 
  • Now you'll see what's left in the cast iron pan... SCHMALTZ! Dump the sliced potatoes in the schmaltz, stir and cook until soft all the way through. This will be about 10 minutes. 

  • While the potatoes are schmaltzing and the chickens are finishing up, melt some butter into a pan and throw the chopped garlic in. 
  • When the butter is all melted and garlicky, throw in a bunch of spinach. Mix around and cover on low, stir occasionally. Spinach cooks so fast, this will be done in just a few minutes. 
  • Check on your chicken and potatoes. Also check the temp inside the chicken, it should never be under 165F. We don't want salmonella up in here. Make sure it's cooked through!


Dump everything onto a plate, take a picture, take it a few more times to make sure it's perfect, put it on instagram and then.... EAT!





Sorry if this is wordy or a mess, I should have did this last night and scheduled it like I always do but I didn't cuz I was lazy and now I'm up way way way too early on my day off just to write and post this. And I really wanna go back to sleep but I think I should just get up and start my day since I have a lot of work to do to make UNICORN POOP for my boss' birthday tomorrow. K bye.



Blueberry Lemon Muffins

The other day I posted that I stopped Paleo. One of my biggest reasons was because breakfast was really difficult for me. Although I ditched the caveman way, I still needed something clean and healthy to grab and go in the morning, so I made these muffins! And they do happen to be paleo friendly... of course I would do things backwards.



Gluten free, grain free, so fresh and so clean.

What you need:
2 cups almond flour
1/8 teaspoon salt
1/2 teaspoon baking soda
1 cup fresh blueberries
4 eggs (2 whole eggs and 2 egg whites)
2 tablespoons vegetable oil
1 teaspoon vanilla extract
1 lemon (will be 2 tablespoons fresh lemon juice)
1/4 cup raw honey





What you do:

  • Preheat the oven to 350F and put some fancy lil liners in your muffin tin. 
  • Mix all the dry ingredients in a medium size bowl
  • In another bowl, whisk together the eggs (2 whole, 2 whites) honey, vanilla, oil, and lemon juice
  • Add the dry ingredients to the egg mixture slowly, and stir until fully mixed (batter will be very slightly lumpy)
  • Dump in the blueberries and slowly fold them into the batter using a spatula


  • When mixed, evenly pour the batter into your muffin cups
  • Bake for 25 minutes, let cool




This was my first time making any kind of muffins from scratch and they came out pretty damn good! I will be making them again but with some small changes. For example, I'll probably add some coconut flour, protein powder and lemon zest.

Garden Meatballs


Today I have another super healthy one for you. This is 100% Paleo friendly, so it's a meal for everyone! When I made these, I made enough to take some to work for lunch everyday. These are so beyond easy and you can do so many variations. I went with zucchini and spinach because that's what I had on hand, but you can add peppers, basil, celery (barf!), mushrooms (barf!) and even carrots! Any veggies you love!

What you need:
2 pounds of grass fed beef
2 zucchini's
some baby spinach
some onion
lots of garlic
1 cup almond meal
3 eggs
dried thyme
dried parsley
garlic powder
salt/pepper

What you do: Oh man this is easy....

  • Preheat oven to 350F
  • Chop up all your veggies very small, set aside
  • Mix all the dried ingredients in a small bowl (almond meal and seasonings)
  • Whisk the eggs in a small bowl
  • With the beef in a large bowl, dump all the other ingredients in and mix it all up with your hands. Don't be afraid to get dirty, that's what soap and water is for. 
  • Mix it enough so that everything is basically mixed evenly, but don't over mix because it will make the meat tough when it cooks. 
  • Grease a pan
  • MAKE MEATBALLS! About 1 1/2 inch in diameter and lay them on the pan and put them in the oven for about 20 - 25 minutes. 


When I made these, I don't think I had any intention of posting them. So, this is the only picture I've got.


You can enjoy these alone as a snack, or make a meal out of them with your favorite tomato sauce over some spaghetti squash.

Recipe Week - Fried Chicken



Let's try this Recipe Week thing again, shall we?  Let's kick it off with some super simple healthy  fried chicken. Although I made the decision this past weekend to drop the paleo life I was trying to succeed in, I'm going to be posting paleo friendly recipes. I've been sitting on them and would love to share them. You don't have to be paleo to eat this, they're just approved for those who are paleo. These are for everyone!



What you will need:
almond flour
eggs
chicken
zucchini
garlic
grass fed butter (Kerrygold)
garlic powder
paprika
dried parsley
salt/pepper


What you will do:
1. Chop up your zucchini and set aside. Chop up tons of fresh garlic and set aside. 
2. Make your "breading" mixture. Dump some almond flour in a bowl (however much you think you will need for whatever amount of chicken you have. I eyeball everything, I never measure.) Season the almond flour with whatever you like, I chose garlic powder (tons of it!), dried parsley, paprika, black pepper, and a little salt. And mix it all up!
3. Crack an egg or 2 and whisk in a bowl. Then bathe the chicken in it's children, and let the kids drip off a bit. 



4. Heat your pan on medium and drop in lots of grass fed butter.
5. While the butter is melting, bread the chicken in the almond flour mixture and cover all over. 
6. When the pan is hot, throw those babies in and start browning them! Cook for about 5-6 minutes on each side. This will depend on how thick your pieces are, so make sure to check if they are cooked through. In the last couple minutes, I put a cover on the pan to keep the moisture in. Add more butter if the pan gets dry. 



While your chicken is cooking, heat some Kerrygold in a pan again. When it's melting, throw in your zucchini and garlic and season it with salt/pepper. Mix it all around and place a cover on top, set the temp to low and let them steam and mix them up every few minutes until they are soft and slightly transparent.




When everything is done, smile and nom.

Bye Paleo



Paleo was really just not working out for me. It's been great for the boyfriend, he was losing weight and feeling great. I haven't lost a single pound and I'm always hungry. And I think I know why.

Paleo, for me, had been more of a hassle than helpful. I found myself beyond hungry (or just not eating) more often than I should have been. And this was all because I either never had something available when I got hungry or if there was food it was like "oh I can't have that", so I would starve. And we all know that is NOT good for you! Recently I realized that I had been overly exhausted, grumpy and hungry. And I started putting the pieces together. I'm actually getting grumpy just writing this because I'm annoyed that it didn't work out for me. Did I not try hard enough?

Truth is, it just doesn't fit my lifestyle (or bank account). And I feel like I've really missed out on a lot of meals and I'm just exhausted from lack of food. Food is fuel, people! I wake up too early for work to make myself a "paleo breakfast", I've tried meal prepping things for the week but that hadn't worked out fully. I had to say goodbye to a lot (if not all) of the snacks I was having during the day when I was eating clean because they weren't paleo friendly. I'm the kind of person that needs to eat all day long. I need my breakfast, snack, lunch, snack, snack again after work, dinner and sometimes a snack after that. On most days while on paleo, I had less than half of that. I was starving! So I've parted ways with the caveman.

I learned a lot from paleo and will still take that with me. For example, I will still be eating grass fed meats, grass fed butter, I'll still use almond meal instead of breadcrumbs or regular flour, and probably still no dairy (since I'm not a milk and cheese person anyways). But I will be putting some grains back into my diet, I will just be very wary of the amounts. While I may still not eat pasta, I will be allowing quinoa back in. I've missed quinoa!

Like any changes with food and your body, something that works for someone else may not work for you. I tried Paleo for about 3 months and it didn't work for me. I have absolutely nothing negative to say about the Paleo way, I just think it is more for people that have some more time and money on their hands than I do to be fully on board. So if I wanna quickly dump peanut butter on some toast in order to actually eat breakfast in the morning, I'm gonna do it. Or have oatmeal, or make recipes with oats. If I wanna have a Quest bar for a snack, I'm gonna do it and not feel like I'm "cheating". If I wanna have some brown rice with my chicken or steak instead of eating 39278 sweet potatoes a week, I'm gonna do it.

Back to clean eating, goodbye Paleo.

It's Not The Load

Wanna know some songs that get me through the moments of when I wanna choke the shit outta someone and smash their faces off the pavement? Also known as, songs that pump some positive vibes through my veins and make the rage subside - at least a little bit.

Let me give you a little background on some of the stress that's been subconsciously suffocating me lately. To keep others information private, I'm gonna be very brief, but you'll get the idea that I've kinda got a lot on my mind. Work stuff may or may not be part of my stress but if it was, it wouldn't be mentioned anyways because duh you don't talk about work on your public blog. Ever.

  • Although everything has been replaced (and then some), the boyfriend getting his tools stolen from his work van at xmas was a very stressful time. Especially when we were told it would not be covered by insurance. 
  • I didn't mention this anywhere when it happened, but recently my little sister passed out and was taken to the ER. I really wish I was back home. 
  • I'm still burning about losing the mega millions. Just saying. AKA financial stresses, that I'm sure most of us endure these days in America. 
  • A huge change that the boyfriend is building up right now, but unfortunately ONE PIECE of this puzzle is missing and he's having trouble making it work out on time. This change is huge for our future and the anxiety of it pretty much hanging by a thread right now is incredibly suffocating and terrifying. 
  • Some of my own goals that I've been trying to make come to fruition, but I keep hitting walls. But of course, they're walls built by me.

So there's a little piece of some shit I've been sitting silent on. Some shit that I didn't even realize was really stressing me out until these last few days when some smaller crap set me off (although I'm totally fucking justified in my frustrations) but it set me off hard enough that I knew there was something else behind it. It took the boyfriend asking me over and over what's going on and telling me I seem different and sad. I finally realized that I'm not sad, I'm stressed. Well, maybe the stress is making me sad.



For most of my life I was always a dweller and an over reactor and I carried a load of shit with me at all times. In the last few years I've worked on trying to not let things bother me, so much so that I now don't allow myself to deal with the things I should be letting bother me. If you've been around here awhile, you know that I'm a person with a not-so-glittery past that has come a very long way. Such a long way that it sometimes seems like I've been alive for centuries. But I'll still be a work in progress every single day til I die.  And I'm ok with that, especially when there's music to get me through.

One of the most important songs (not shown on this list) is Christina's "I Will Be". There are times when I look back to certain days, years ago, when I'd be laying there with this song on repeat, and I could swear it saved my life.

And now onto the chicken dinner.... You may or may not have seen me mention that I'll be posting a recipe everyday this week. I've been sitting on a few and figured I'd dump 'em all on you at once, kinda.  Now, I realize that I need to stop using my iphone as a camera, and pick up the camera I wasted a gazillion dollars on. I say wasted because it's been months and it's gotten no use. I even bought a book to learn how to use it and I haven't touched the book either. Whoops. Well, however I photograph the food, I hope you enjoy and try these recipes!



Grilled Lemon Garlic Chicken Boobs

This recipe happens to be 100% Paleo friendly. Which is 100% perfect in my world. Let's get to it!

What you will need:
bone in, skin on, chicken breast
lemon
shallot
garlic. (if you're like me, lots of garlic.)
salt/pepper
grass fed butter (Kerrygold is the brand we use)
green beans
sliced almonds
spinach
a grill (an indoor grill is fine too, that's what we used)
some pots and pans and stuff like that


What you will do:

  • Rinse the chicken under cold water and pat dry, set aside. 
  • Slice the lemon, chop up the garlic and shallot and stuff everything under the skin of the boobies. 
  • Sprinkle salt and pepper all over dem titties and place them on the grill with the skin side UP at first. All that nonsense underneath with the bones will take awhile to cook, about 10-15 minutes. Since we used the indoor grill, it was more like 15-20. 
  • Flip the boobs to skin side down and cook for about 7 mins if you're using a flame grill. With our indoor grill, we did about 12 mins and then shoved it in the oven for a bit and used a meat thermometer to make sure it was done. AKA, we did this shit the hard way.
    [chicken should never ever be pink! always check that it is white, juice runs clear, temp is not under 165F degrees.]



Sides time (while chicken is doing it's thang):

  • For the green beans, cut ends off and rinse them. (Clearly, as you can see in the picture, the boyfriend did not cut the ends.) 
  • Throw beans and 3-4 cups of water in a pot, bring to boil and boil for 6 minutes, strain when tender.
  • In a small saucepan, melt grassfed butter and then add sliced almonds. Cook for 3-4 minutes.
  • Dump the beans and butter together and mix. 


Spinach.....

  • Chop up a shit ton of garlic (or whatever amount you like, but a shit ton works best cuz garlic is delicious.)
  • Melt butter in a pan, add garlic and cook for 30 seconds. This makes the butter all garlicky and amazeballs.
  • Add spinach, salt/pepper, mix it all up and cook until wilted. Spinach cooks wicked fast so don't get impatient and hangry, you'll be eating in minutes! 


At the end of all this, you have a yummy dish of noms.

A Makeover

Shuffle In Diagonal

I'm tired. Like, really tired. And I have no idea why. I feel so behind this week, actually scratch that.. I AM behind this week. I'm struggling with keeping up with work, gym, home life, blogging, it's all eating me alive this week. When you get behind on reading blogs, do you start to miss your blog friends? That's where I am right now. Thankfully, the boyfriend is working this weekend so I'll be lounging out and catching up on your lives! Hashtag can't wait. 

On a more musical note, I had a slightly epic twitter thread with Kate at Thoroughly Modern. If you've been around my blog for awhile, you know that I've been a Miley fan since the Hannah days (thanks to my little sister). So, I had my Miley playlist on and was feeling nostalgic and decided to throw out a little "name that tune". See for yourself. 



I agree Amber, I agree. 

I remember taking my sister to see the Hannah Montana Movie in the theater and everyone was up doing the hoedown throwdown when that scene came on. And I remember doing the dance with my sister in our living room, over and over and over haha. I miss that kid. I'm sure she probably thinks this dance is stupid and embarrassing now that she's almost 13. But it will always be fun and special for me!

And now I'm obviously going to go with Hoedown Throwdown for fellow Miley junkie, Whitney's #backthatazzup friday!

Blogger Sucks, Birthdays Are Cool

If blogger was a person, I would beat it. All these errors lately, ugh!! Anyways...

Did you know that there were two blogger birthdays yesterday? Yep. Anna and Helene. It got me thinking... I don't really know anyone's birthday here in blogland! Except for Ashten because we share a birthday and we share it with Tupac. And for my whole life I never knew anyone with the same birthday as me (except 2pac) and neither did she! We got really excited when we found out we were not the only one sharing the 0616 day with Mr.Thug Life himself.

side note: I was obsessed with him before he died (and a long time after, and before I knew we had the same birthday, aka destined for each other -that's what I believed). Take a look HERE for a tiny peek into said obsession. Seriously, tiny peek... into huge obsession. 



Wait, the point of this post was not about 2pac. The point was that I would like to know... WHEN IS YOUR BIRTHDAY!? For some reason, as we get older, we kinda start to believe that our birthdays are not a big deal anymore. That's bush league! I wanna give all my blog friends something on their day; whether it's a tweet, an email, a mention on the blog, or a gift in the mail... anything!
